It's definitely not italian, which would be something like "Evviva la vita", and it should mean "Cheers/hurrah to life" (if you translate hurrah from english to spanish you get viva )

if you see the video carefully you can read will's lips saying viva la vida..

i think that sentence/expression will have many different translations into english, but is very spanish. , i'm beging to like it.

from the translations that i've seen here of that sentence (live the life, long live life, cheers to life), for me all them works. the beauty of spanish a thing can have so many translations all them so possitive.
